I legit don't know the etiquette for replying to a thread with a lot of participants in terms of leaving everyone tagged... Especially if one is posting several replies. Seems like either leaving or removing could be annoying for people. Any tips?

It will vary a LOT depending on context, you'll need to use your own judgement based on what kind of thread it is and how people are participating.
As a rule of thumb, only tag people if you think they would benefit from seeing your reply.
By the way, if people get fed up of being tagged in a conversation they do have the option to "mute conversation" so that they don't get notifications from that thread any more. More info at https://fedi.tips/muting-conversation-threads-in-mastodon/

@FediTips Makes sense! I guess the replies downthread will still be visible to everyone even if they're not tagged in each one, so one could also tag just the first reply post and not the rest? But I don't have a sense of how likely people will be to see the further replies, depending on how they interact

Yeah, you could even remove all the tags and it won't notify anyone but it will still be visible in the thread if someone is browsing it.
(That extreme is a bit useless for discussions though as people are unlikely to notice your reply without at least someone being tagged
)
