I'm going to cook the absolute shit out of some mushrooms tonight. I've been hankering all day after some mushroom bacon. I don't know if that's a thing or just what I call it, but it's basically mushrooms cooked down in soy, maple, garlic and smoked paprika until it's chewy. I'm then going to make a cashew/nooch/smoked salt cream, some GF pasta, and I'm going to throw it all together with an amount of parsley that would anger the gods of Olympus. Plantbased, gluten free, dairy free carbanana. Just like they do in Roma. Hooray! What are you having for dinner tonight? X
