@shauna A bolognaise, just replace the meat with lentils - green, puy or beluga all works. Add some finely chopped mushrooms (champignon is fine) for umami. Lentils at least doubles weitght whild cooking. You can also add some extra veggies, like pastinak, sellery, finely chopped. Using cumin is also good for umami, and some vegetable stock.
