A neat feature of mastodon is you can follow hashtags, and when just starting out this is good, because I don't think the "starter pack" feature for mastodon is done yet, so mastodon can feel kind of empty when first starting out, it takes a bit of effort to build up enough people to follow to have a good pile of stuff to read.
There's some anonymous helpful person who runs a bunch of fedi help accounts, and they periodically post interesting accounts to follow at @FediFollows

Been watching your videos for a while and absolutely love the passion you put into “they want you to stop creating”Nice to see more people than ever being aware of enshittification. Mastodon is different from other social medias with their algorithms. You’ll have to find cool people that make art to follow. Hashtags can be followed to help fill an empty feed.

1. You can easily block people, just view their profile and click the hamburger menu on the right – use it freely and often
2. Following people is easy too, as is unfollowing them – do it freely and often
3. Most people start on mastodon.social, but you'll probably have a better time if you find a smaller instance full of people you like and switch to it
4. You must add alt-text to images
5. Actually, I'm lying – there are no rules
