It's a really good question, I tried asking a week or two ago and no one could suggest any general public instances as they assumed GTS was only for self-hosting people.
As far as I know GTS can be run as a public instance too, but for whatever reason there don't seem to be any well-known general public instances so far?

@FediTips @WeirdWriter gts is not exactly user-friendly (no web UI, requires choosing a client and not always mastodon behaviour, federation of posts is not as liberal as mastodon for discovery) and the moderation tools are on the thin side (no way to block a remote user in a reversible way)
also the gts userbase is not exactly the kind to run public servers
i mean i run gts and i used to have friends on it because we can communicate re: the software and moderation in a close fashion, but i wouldnt feel comfortable running it for others
