My english is too bad for now to make a complete guide, but maybe I can help a bit.
Do you have hazel in your area ? A carving knife and some sticks can be a start

@kirbius ok, don't start with ash, is my advice
Hazel can be quite common in young forest and hedges. They have several trunks, like a bouquet of flowers but with sticks.
It is not the best wood for carving (the best in terms of easiness is basswood), but it can be fun to make patterns on it, and have a fancy walking stick.
