This is only my own experience and does may not by applicable for other people. Keep that in mind.If I want freedom, I go and enjoy free time with those I do enjoy.
If I don't want annoying services, I just vote with my wallet.Of course, this is not an answer for all the problems.
Technology should serve us.For many occasions, when the people tell me that I need to scan QR code to see menu at the restaurant or do something similar.
I just tell them "I don't have a telephone„
And they often get confused.
Some of the places they get me bypass all their services just because they don't know what to do and is too much to handle.
I got to drove some buses for free, because the bus driver didn't know what to do.
I get interrogated on the airport, in a much less time, also because there is much less information to be extracted.I wasn't bothered by email and spam after all, just simply telling them I don't have telephone number, email address or home address and they leave me alone.
Of course there was a time that that was me who was trying to get their service and I need to be compliant.
But that's very much depends on situation and what I need. -

@oldrawgabbit my phone broke, so I tried using just my laptop. I am a VERY tenacious chap. For instance, lived for just on 20 years with no physical ID, book, card, driver's license, the lot. A sim card was hard, bank.. ha ha not so hard to open and account with no hard ID. Eventually got one , needed it to see the Penquins at Boulders Beach, 3 years ago. Phone? One month. Had to get a phone....

It doesn't require us to create a account
It doesn't require us to download a app
We can just not provide a feedback at allAnd since we dont have to wait for a waiter to bring us a menu thanks to QR code, we are fine with it

I saw a sign in the bathroom at a huge gas station that asked people to scan a QR code above the toilet to leave a restroom review.
I immediately thought, "No way." Then, "Why?"
