If you just want to follow and interact with accounts from other platforms, you don't need to create any new accounts. You can follow and interact with accounts the same way, no matter what platform they're on.
However, if there are features specific to a platform that you want to use, you would need an account on a server from that platform. Different platforms have different features.

Also, you don't need to create new accounts for each server, the servers talk to each other.
