To DM:
1. Start writing a new post
2. Mention the account or accounts you want to send it to
3. Change the post's visibility setting to "Mentions only" (also called "Private mentions" or "DM" on some apps)
4. Post itMentions-visibility posts just go to the accounts mentioned in them. More info about visibilities at https://fedi.tips/who-can-see-my-posts-in-mastodon-how-do-i-send-dms-in-mastodon/

p.s. Don't use DMs to send sensitive information, as they aren't end-to-end encrypted.
There's nothing in Mastodon's software which shows DMs to admins, but an admin with enough technical knowledge could view your server's database directly without the software and see DMs. I've never heard of this actually happening, but it's possible so that's why it's best to avoid sensitive info.
