I've shared a workshop (in Danish!) named 'Fermentation 101' to celebrate the autumn equinox, organized by the fantastic
@___earthweaver at the stunning
@skovhaven_byaugusta .
Communal luxury: vegetables from
@mosegaardenjordbrug were harvested from the fields in the morning and came directly to our table.
It was a delight to return to Jyderup, just three months after we celebrated the longest day of the year together. Special thanks to Elena for your warm hospitality and for all dear participants.
This event also gave me the opportunity to present excerpts from a fermentation zine I'm currently working on, where I'll be writing down my favorite recipes.
My aim was to share the principles and the fundamental science behind lacto-fermentation. I truly believe it's the most accessible yet a wonder-full entrydoor to the world of fermentation. You learn how to enhance the flavour profile of your most basic local raw vegetables and you find yourself a new delicious and daily reason to crave for something good for you. It is also a way to gain a deep appreciation for the mystery of what naturecultures have been crafting for millennia. Lactofermentation is a remedy to solitude.
