Interesting, I live in Europe as well, but my experience is very different. I have a Google-free phone running GrapheneOS and that's it. For banking, I have a small ChipTAN device, and for online payments, I use a FIDO2 token. If a company tried to force me using an app, I'd go somewhere else. Sometimes, you have to ask customer service for a non-app option, but even that is rare.
