Still, even if you don't disable the sidebar AI chat, it can't do anything if you don't select a service for it to connect to so it's essentially not installed as well.

We've been on X/Twitter for many years, but it's time to reduce our activity there and instead promote Mastodon as our main social media channel now.@rrustema @libreoffice Might I recommend switching to Groupedbar Compact, then? It pulls the most popular features up as icons, but still provides drop-down menus if you need something more obscure.
Instead of "Open Remote" and "Wizards" or "Templates" you just get 3 buttons: Open, Save, Print.

It hides absolutely everything and then it's just you and the words.

After all, different people need different parts of the interface. Stripping it back to the bare essentials will mean different things to each of those users.
However, the interface is highly customizable. There are a ton of options right there in the View menu, and if you select "User Interface" you can choose a preset that fits your wants/needs.
