Because: if US autorities have access to sensitive data of EU people, what or who is making sure that this access is reliably limited to the data of people who are really travelling to the US? -

Both. Also with journalists.
The "EU" or "EC" is often taken as a single entity. But they aren't. There isn't one "they", but there are many political factions involved in the policymaking.
There's another fedi discussion going about representatives within the EC opting for W Social, a proprietary shady social media, and that they should instead put more weight on their presence in the fediverse.
The EC fediverse account is already answering and responding sporadically to people who reply to the announcements they publish on their account. That is very valuable: direct 2-way communication. There is a social media team operating it, who are able to convey opinions from fedizens to policy makers.
Frequently on the EU official website people are asked to do a survey and state their opinion on upcoming policies. When you take the time to fill those out, you never hear back. You never know if you just wasted your time.
Tagging them increases the value of fediverse.
