I've tried with a couple and don't see either of those options, whereas I can for accounts on other instances.

@blag huh, that should work just the same, as long as you follow them. Do the buttons not show up or what are you seeing?

@HeNeArXn Aha, maybe it's because I don't follow them, which I don't because all their posts appear in my 'live feeds' tab.
Is there a way to follow them but then only see their posts in one of the 'live feeds' or 'home' feed?

@blag if you add them to a list I think you can set that list to exclude people on it from the home timeline

Yeah, you have to follow an account to see an option for getting notifications about it.
If you're following them their posts will also appear in your main Home feed and Live feeds. Which feeds are you wanting to exclude them from?
As Sven says, you can also set them to only appear in "Lists", which are like custom themed timelines. More info about the Lists option at https://fedi.tips/how-to-use-the-lists-feature-on-mastodon (Lists are handy if you are following too many accounts in your main feed).

@FediTips the main thing I want to avoid is seeing the same posts in different places. That's why I don't follow people on my instance, because I can see their posts in my live feed.
It sounds like adding them to a list is an option, but if I set that to 'list only', will that also exclude their posts from my instance's live feed?

The List-only option will only exclude them from your main "Home" feed.
The only way to hide them from your live feed is to mute the account, but that would mute them completely in all feeds.
