TL:DR - Custom emoji are special emoji added by your server admin that you can use in your posts. People on other servers can see your custom emoji, so you can add cool images in posts that they can't (unless their admin added the same ones) :rickroll:

You can add gifs by attaching a gif file or by posting a link to a gif which gets automatically embedded.
Some apps which have difficulty with gif uploads, but at the very least your server's website should be able to cope with them.

Used to be that we could type : or ; or something, followed by
and the like and the corresponding emoji would come up.
I am a touch typist and much prefer that to having to take my hands off the keyboard and muddling around with the mouse.
Is that function no longer available? I have been away for a long time, so I have forgotten what the "emoji start symbol" was.

You can still type emoji on the keyboard by starting with a colon : and then entering a keyword, then selecting the emoji you want with arrow keys. This works for standard emoji and custom emoji.

Pity it doesn't give all emojis with the word in it. Eg. if I type :angry I get

I'm owned by a cat. I have to know the emojis, right?Yeah, if you remember the exact name of the custom emoji, you can start by typing :angrycat and it will appear in the suggestions.
The more general keywords don't seem to work with custom emoji.
