how do you handle posts in your feed that are identified in one language but the post is in another? Do you mute them? Do you mute the server it came from? Is either effective?

If it's just the one account doing this I would try muting that account (perhaps with a temporary mute?).
Muting the entire server probably isn't a good idea, unless most of its members are using the wrong label for their posting language.

Muting doesn’t seem to be very effective. I’m probably muting eight or nine or more posts that were marked as English, but in another language every single day.
I don’t mean to single out any particular server, but mastodon.social is a big culprit. Also European mastodon servers often post in different languages, even though it’s marked as English.
