1) It's all based on IETF standards, with configuration and custom integration code fully FOSS and documented at: https://chatmail.at/doc/relay/ with hundreds of permission-free deployments.
2) We know of several alternative relay implementations and deployments
3) Own servers or big email providers can be used (YMMV)
However it's fair to criticize our relentless focus on E2EE, and our moving away from email addresses as identity.

Ganz von der Hand zu weisen ist der Vorwurf nicht. Jedes erfolgreiche FOSS nimmt proprietäre Züge an, sobald die Nutzer Bequemlichkeit und die viel zitierte eierlegende Wollmilchsau einfordern.
Mithin: Gräte von Appel lassen eine andere Nutzung von DeltaChat als mit chatmail praktisch gar nicht mehr zu. An wem liegt das nun…?
