One server might go down, but the whole network doesn't go down.
I'm not sure what you mean by losing an identity? Servers that go down usually come back up later and you can sign in as normal.

@FediTips It does go down here in Spain tho, at least, the server where I am: due to Cloudfare being blocked by the ones who regulate internet here, I can't use Mastodon when there's a masculine football match because it says there's a connection problem 🥲.

Ah yeah that's true, but that's why it's best to use servers that promise to give three months warning of a closedown (all the servers listed at https://fedi.garden and https://joinmastodon.org/servers promise three months warning).
Sudden closedowns are a risk for anything on the internet to be honest, which is why it's best to encourage a diverse range of online providers.

One server might go down, but the entire network doesn't go down. If you have an alternative account on a different server that would still work.

Cloudflare is this single point of failure for single user hosts such as myself who can’t be bothered to set up something better.

What do you recommend people use instead of Cloudflare that’s not much harder to set up and manage than Mastodon itself?
