As far as I know, the only server lists which have safety and reliability requirements are https://fedi.garden and https://joinmastodon.org/servers (please let me know if there are others!). These lists are manually curated by humans.
Automated non-curated server lists are much longer but do not have any safety or reliability rules, so they aren't a good way of finding a server.

@FediTips is there a way to get more information on servers? For instance, mine no longer embeds youtube video, and if I switch I'd want to make sure I switched to one that does (beyond just asking the admins of course)?

You can find out more about a server by going to its website's "about" page. If you're using a computer the "About" link is in the bottom left corner next to the server's name, if you're using a phone click ☰ in bottom right corner and then "About".
On the YouTube issue, as far as I know there is no setting for preventing videos embedding. If that's happening it is due to a bug rather than a decision by the server. This seems to be a known but intermittent bug on Mastodon.

@FediTips hmmm it's been happening for a long time now. Back when group notifications were rolling out is when it started. Glad to know it shouldn't happen elsewhere. thanks!

It may happen elsewhere too, it seems to be a bug that affects many servers. It's not in the control of the server, as far as I know?
