I made vegan gluten free cupcakes for a wedding a few weeks ago using this recipe: https://www.noracooks.com/vegan-vanilla-cupcakes/
I used King Arthur Gluten Free flour in place of wheat flour as the only substitution and they turned out great. The recipe is for cupcakes but a lot of the reviews mention baking it as one large cake and it turning out fine.
I've also done this cake for a birthday in the past and it's quite good if a bit heavy. The nice thing is that it's gluten free by design, no ingredient subs needed. And it doesn't require a premade gluten-free flour blend (which isn't always available)
